Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
2 tablespoons cornstarch
1 tablespoon vegetable oil
4 cloves garlic, minced
1/3 cup honey
1/4 cup low-sodium soy sauce
1 tablespoon rice vinegar (optional)
1 teaspoon sesame oil (optional)
Sliced green onions and sesame seeds, for garnish
Instructions
1. Season chicken pieces with salt and pepper, then toss with cornstarch until coated.
2. Heat oil in a large skillet over medium-high heat. Add chicken and cook for 6–7 minutes, stirring occasionally, until golden brown and cooked through.
3. Reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant.
4. In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil.
5. Pour the sauce over the chicken and stir to coat. Simmer for 2–3 minutes until the sauce thickens slightly.
6. Remove from heat and garnish with sliced green onions and sesame seeds.
7. Serve hot with rice, noodles, or vegetables.
Notes
For a spicy kick, add a pinch of red pepper flakes or a squirt of sriracha to the sauce. This recipe works great with chicken thighs as well. Double the sauce if serving with rice to soak up the extra flavor.
