  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese

  • 1 large egg, beaten
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • Cooking spray

Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
  2. After 10 minutes, rinse the zucchinis under cold water and squeeze out as much moisture as possible using a clean kitchen towel.
  3. In a large bowl, combine the grated zucchini, flour, Parmesan cheese, parsley, garlic, beaten egg, black pepper, and onion powder. Mix until well combined.
  4. Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  5. Form the zucchini mixture into small patties, about 2 inches in diameter.
