- 2 medium zucchinis, grated

Instructions
- Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, rinse the zucchinis under cold water and squeeze out as much moisture as possible using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, flour, Parmesan cheese, parsley, garlic, beaten egg, black pepper, and onion powder. Mix until well combined.
- Preheat the air fryer to 375°F (190°C) for about 5 minutes.
- Form the zucchini mixture into small patties, about 2 inches in diameter.
- Lightly spray the air fryer basket with cooking spray. Place the patties in a single layer in the basket, making sure they do not touch.
- Air fry the fritters for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Once cooked, remove the fritters from the air fryer and let them cool slightly before serving.
- Enjoy warm with your favorite dipping sauce.
