  • 1 cup sour cream

  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually mix in the dry ingredients, alternating with the sour cream until just combined.
  6. Fold in the diced apples gently into the batter.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. In a separate bowl, mix together the brown sugar, rolled oats, chopped walnuts (if using), and ground cinnamon to make the crumb topping.
  9. Sprinkle the crumb mixture evenly over the batter in the baking pan.
  10. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  11. While the cake is baking, prepare the cinnamon apple drizzle by combining 1 cup of diced apples, 1/4 cup of sugar, 1 teaspoon of cinnamon, and 1 tablespoon of lemon juice in a small saucepan. Cook over medium heat until the apples are tender, about 5-7 minutes.
  12. Let the cake cool for a few minutes before drizzling the warm cinnamon apple mixture over the top.
