Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the flour, granulated sugar, salt, and cinnamon together.
  3. Add the softened butter and mix until crumbly.
  4. Stir in the egg yolk and ice water until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  5. In another bowl, combine diced apples, lemon juice, brown sugar, vanilla extract, and cornstarch. Stir to coat the apples evenly.
  6. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into circles using a cookie cutter.
  7. Place a spoonful of the apple mixture in the center of each circle.
  8. Fold the dough over to create a half-moon shape and seal the edges with a fork.
  9. Place the cookies on a baking sheet lined with parchment paper.
  10. Brush the tops with the beaten egg for a golden finish.
  11. Bake in the preheated oven for 15-18 minutes or until golden brown.
