- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter, softened
- 1 egg yolk
- 2 tablespoons ice water
- 1 medium apple, peeled and diced
- 1 tablespoon lemon juice
- 1 tablespoon brown sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 egg, beaten (for egg wash)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the flour, granulated sugar, salt, and cinnamon together.
- Add the softened butter and mix until crumbly.
- Stir in the egg yolk and ice water until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- In another bowl, combine diced apples, lemon juice, brown sugar, vanilla extract, and cornstarch. Stir to coat the apples evenly.
- Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into circles using a cookie cutter.
- Place a spoonful of the apple mixture in the center of each circle.
- Fold the dough over to create a half-moon shape and seal the edges with a fork.
- Place the cookies on a baking sheet lined with parchment paper.
- Brush the tops with the beaten egg for a golden finish.
- Bake in the preheated oven for 15-18 minutes or until golden brown.
- Let cool for a few minutes before dusting with powdered sugar, if desired.
Notes
- For extra flavor, add a pinch of nutmeg to the apple filling.
- You can use store-bought pie crust for quicker preparation.
- These cookies can be frozen before baking for a quick treat later.
