- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1/4 cup sour cream
- 1 egg
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray (for baking)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the mashed potatoes, shredded cheese, breadcrumbs, green onions, sour cream, egg, garlic powder, salt, and black pepper. Mix until well combined.
- Using your hands, form the mixture into small balls or puffs, about the size of a golf ball.
- Place the potato puffs on a baking sheet lined with parchment paper or lightly greased with cooking spray.
- Spray the tops of the puffs lightly with cooking spray to help them brown.
- Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
Notes
- For a spicier version, add some diced jalapeños to the mixture.
- These puffs can be made ahead of time and frozen before baking. Just bake them straight from the freezer, adding a few extra minutes to the cooking time.
