Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1/4 cup sour cream
  • 1 egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray (for baking)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the mashed potatoes, shredded cheese, breadcrumbs, green onions, sour cream, egg, garlic powder, salt, and black pepper. Mix until well combined.
  3. Using your hands, form the mixture into small balls or puffs, about the size of a golf ball.
  4. Place the potato puffs on a baking sheet lined with parchment paper or lightly greased with cooking spray.
  5. Spray the tops of the puffs lightly with cooking spray to help them brown.
  6. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For a spicier version, add some diced jalapeños to the mixture.
  • These puffs can be made ahead of time and frozen before baking. Just bake them straight from the freezer, adding a few extra minutes to the cooking time.
