Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper until well mixed.
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, ensuring not to cut all the way through.
- Stuff each chicken breast with the ricotta mixture, securing the opening with toothpicks if necessary.
- In a skillet, heat olive oil over medium heat. Sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish. Pour marinara sauce over the top of the chicken, and sprinkle the remaining mozzarella cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
- Remove from the oven and let it rest for 5 minutes before serving.
Notes
- For added flavor, consider adding fresh basil or spinach to the ricotta mixture.
- This dish pairs well with a side of pasta or a fresh garden salad.
- Leftovers can be stored in the refrigerator for up to 3 days.
