Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup barbecue sauce
  • 2 ripe avocados
  • 1/4 cup fresh cilantro
  • 2 tablespoons lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.
  3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, until cooked through and no longer pink in the center.
  5. While the meatballs are baking, prepare the avocado goddess sauce. In a blender, combine avocados, cilantro, lime juice, garlic powder, salt, and pepper. Blend until smooth and creamy.
  6. Once the meatballs are done, toss them in barbecue sauce until fully coated.
  7. Serve the barbecue meatballs over cooked rice or quinoa, drizzled with avocado goddess sauce.
  8. Garnish with extra cilantro, if desired, and enjoy!
