- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 1/2 teaspoons baking soda

- 1 cup buttermilk, room temperature
- 1/2 cup vegetable oil
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup sweetened flaked coconut
- 1 cup chopped pecans
- 1 1/2 cups granulated sugar (for frosting)
- 1 cup evaporated milk
- 1/2 cup unsalted butter
- 4 large egg yolks
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, sift together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- In another bowl, whisk together the buttermilk, oil, eggs, and vanilla until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Slowly stir in the boiling water until the batter is smooth and well combined.
- Divide the batter evenly among the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- While the cakes cool, prepare the frosting by combining the sugar, evaporated milk, butter, and egg yolks in a saucepan over medium heat.
- Cook, stirring constantly, until the mixture thickens (about 12-15 minutes). Remove from heat and stir in the vanilla, coconut, and pecans.
- Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Repeat with the second layer.
- Top with the final layer and spread frosting over the top and sides of the cake. Decorate with additional coconut and pecans if desired.
Notes
- For a richer flavor, you can add a tablespoon of instant coffee to the boiling water.
- This cake can be made a day in advance and stored in an airtight container.
- For a gluten-free option, substitute the all-purpose flour with a gluten-free flour blend.
