Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, and onion powder. Season with salt and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or skillet over medium-high heat. Cook the steak for about 5-7 minutes on each side, or until it reaches your desired doneness.
  4. Remove the steak from the heat and let it rest for 5 minutes before slicing thinly against the grain.
  5. Warm the flour tortillas in a dry skillet or microwave until pliable.
  6. Assemble the burritos by layering rice, black beans, sliced steak, cheese, tomatoes, avocado, and cilantro on each tortilla.
  7. Fold the sides of the tortilla in, then roll from the bottom to form a burrito.
