Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced apples and caramel sauce gently into the dough.
- In a small bowl, combine the 1/4 cup of sugar and 1 tablespoon of cinnamon for rolling.
- Using a cookie scoop, form balls of dough and roll them in the cinnamon-sugar mixture.
- Place the rolled dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer caramel flavor, drizzle additional caramel sauce on top of the cookies before serving.
- These cookies can be stored in an airtight container for up to a week.
- Feel free to add nuts like walnuts or pecans for extra crunch.
