Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples (peeled and cored)
  • 1/2 cup caramel sauce
  • 1/4 cup granulated sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the diced apples and caramel sauce gently into the dough.
  7. In a small bowl, combine the 1/4 cup of sugar and 1 tablespoon of cinnamon for rolling.
  8. Using a cookie scoop, form balls of dough and roll them in the cinnamon-sugar mixture.
  9. Place the rolled dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Remove from the oven and let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
