Deliciously cheesy and crispy on the outside, these Cheesy Leftover Mashed Potato Cheese Puffs are the perfect way to transform your leftover mashed potatoes into a delightful snack or side dish.

  • Total Time: 35 minutes
  • Yield: 4 1x

Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the leftover mashed potatoes, cheddar cheese, Parmesan cheese, green onions, flour, egg, garlic powder, onion powder, salt, and pepper.
  2. Mix until well combined. The mixture should be thick enough to hold its shape.
  3. Heat oil in a deep frying pan over medium heat until hot (about 350°F or 175°C).
  4. Using a spoon or cookie scoop, form small balls of the potato mixture and gently drop them into the hot oil.
  5. Fry the cheese puffs in batches, turning occasionally, until golden brown and crispy, about 4-5 minutes.
  6. Remove the cheese puffs and drain on paper towels.
  7. Serve warm and enjoy your cheesy treats!

Notes

  • For extra flavor, add cooked bacon bits or chopped herbs to the mixture.
  • If you prefer baking, place the formed puffs on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 20-25 minutes until golden.
  • These can be frozen before frying; just thaw and fry when ready to eat.
