- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/4 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the leftover mashed potatoes, cheddar cheese, Parmesan cheese, green onions, flour, egg, garlic powder, onion powder, salt, and pepper.
- Mix until well combined. The mixture should be thick enough to hold its shape.
- Heat oil in a deep frying pan over medium heat until hot (about 350°F or 175°C).
- Using a spoon or cookie scoop, form small balls of the potato mixture and gently drop them into the hot oil.
- Fry the cheese puffs in batches, turning occasionally, until golden brown and crispy, about 4-5 minutes.
- Remove the cheese puffs and drain on paper towels.
- Serve warm and enjoy your cheesy treats!
Notes
- For extra flavor, add cooked bacon bits or chopped herbs to the mixture.
- If you prefer baking, place the formed puffs on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 20-25 minutes until golden.
- These can be frozen before frying; just thaw and fry when ready to eat.
