- 200g dark chocolate, chopped
- 300ml heavy cream
- 2 tablespoons honey
- 200g mixed red berries (strawberries, raspberries, blueberries)
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Mint leaves for garnish (optional)
Instructions
- In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
- In a large mixing bowl, whip the heavy cream until soft peaks form. Add honey and vanilla extract, and continue whipping until firm peaks form.
- Gently fold the melted chocolate into the whipped cream until well combined, creating a rich chocolate mousse.
- In serving glasses, layer the chocolate mousse with a layer of mixed red berries. Start with the mousse, then add a layer of berries, and repeat until the glasses are filled, finishing with a berry layer on top.
- Chill the parfaits in the refrigerator for at least 30 minutes to set.
- Before serving, dust with powdered sugar and garnish with fresh mint leaves if desired.
Notes
- For a lighter version, use yogurt instead of heavy cream.
- Feel free to swap in any seasonal fruits for variations.
- This parfait can be made a day in advance, just keep it covered in the refrigerator.
