Ingredients

  • 200g dark chocolate, chopped
  • 300ml heavy cream
  • 2 tablespoons honey
  • 200g mixed red berries (strawberries, raspberries, blueberries)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Mint leaves for garnish (optional)

Instructions

  1. In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  2. In a large mixing bowl, whip the heavy cream until soft peaks form. Add honey and vanilla extract, and continue whipping until firm peaks form.
  3. Gently fold the melted chocolate into the whipped cream until well combined, creating a rich chocolate mousse.
  4. In serving glasses, layer the chocolate mousse with a layer of mixed red berries. Start with the mousse, then add a layer of berries, and repeat until the glasses are filled, finishing with a berry layer on top.
  5. Chill the parfaits in the refrigerator for at least 30 minutes to set.
  6. Before serving, dust with powdered sugar and garnish with fresh mint leaves if desired.

  • For a lighter version, use yogurt instead of heavy cream.
