Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons peppermint extract
  • 2 1/2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla and peppermint extracts.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture until combined.
  6. Fold in the chocolate chips and crushed peppermint candies.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes

  • For a stronger peppermint flavor, increase the peppermint extract to 1 tablespoon.
  • These cookies can be stored in an airtight container for up to a week.
  • Feel free to substitute the crushed peppermint candies with crushed candy canes for an extra festive touch.
