Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat together the softened butter, cream cheese, granulated sugar, and brown sugar until smooth and creamy.
- Add in the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- In another bowl, whisk together the flour, baking powder, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- In a small bowl, mix the sugar and cinnamon for the coating.
- Bake the cookies for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and immediately roll each cookie in the cinnamon-sugar mixture.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra cheesecake flavor, you can add chocolate chips or drizzle melted chocolate on top.
- These cookies can be stored in an airtight container for up to a week.
