Instructions
- In a large bowl, combine the diced avocados, grapefruit segments, orange segments, and chopped mint leaves.
- In a small bowl, whisk together the olive oil, honey, salt, and pepper until well combined.
- Pour the dressing over the avocado and citrus mixture and gently toss to combine, being careful not to mash the avocados.
- Sprinkle the chopped pistachios on top just before serving for added crunch.
