Instructions
- In a large bowl, combine pumpkin puree, egg, salt, nutmeg, and black pepper.
- Gradually mix in flour until a soft dough forms. If the dough is too sticky, add more flour as needed.
- Turn the dough onto a floured surface and knead gently until smooth.
- Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick.
- Cut the ropes into 1-inch pieces to form gnocchi.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes.
- Meanwhile, in a large skillet, melt the butter over medium heat. Add sage leaves and cook until the butter is golden and the leaves are crispy, about 3-4 minutes.
- Using a slotted spoon, transfer the cooked gnocchi to the skillet with sage butter. Toss gently to coat.
- Serve hot, topped with grated Parmesan cheese.
