  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup brown sugar
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ¼ cup chopped nuts (optional)
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Pour the cream cheese mixture over the prepared crust and smooth the top with a spatula.
  6. In another bowl, toss the sliced apples with cinnamon, nutmeg, and a little sugar. Layer the spiced apples on top of the cheesecake mixture.
  7. In a separate bowl, mix together the brown sugar, rolled oats, flour, chopped nuts (if using), and salt. Sprinkle this crumble mixture evenly over the apples.
  8. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  10. Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
