Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Pour the cream cheese mixture over the prepared crust and smooth the top with a spatula.
- In another bowl, toss the sliced apples with cinnamon, nutmeg, and a little sugar. Layer the spiced apples on top of the cheesecake mixture.
- In a separate bowl, mix together the brown sugar, rolled oats, flour, chopped nuts (if using), and salt. Sprinkle this crumble mixture evenly over the apples.
- Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
