Ingredients

Scale
  • 8 ounces egg noodles
  • 1 pound beef sirloin, cut into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook egg noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the beef strips and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  4. Add the chopped onion and garlic to the skillet, sautéing until the onion is translucent, about 2-3 minutes.
  5. Add the sliced mushrooms and cook until tender, about 4-5 minutes.
  6. Return the beef to the skillet and add the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine.
  7. Reduce heat to low and simmer for 5-7 minutes, allowing the sauce to thicken slightly.
  8. Stir in the sour cream and season with salt and pepper. Heat through, but do not boil.
  9. Serve the creamy beef mixture over the egg noodles and garnish with chopped parsley if desired.
