Instructions
- Cook egg noodles according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium-high heat.
- Add the beef strips and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- Add the chopped onion and garlic to the skillet, sautéing until the onion is translucent, about 2-3 minutes.
- Add the sliced mushrooms and cook until tender, about 4-5 minutes.
- Return the beef to the skillet and add the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine.
- Reduce heat to low and simmer for 5-7 minutes, allowing the sauce to thicken slightly.
- Stir in the sour cream and season with salt and pepper. Heat through, but do not boil.
- Serve the creamy beef mixture over the egg noodles and garnish with chopped parsley if desired.
