- 2 pounds of baby potatoes, halved
- 1 pound of kielbasa, sliced
- 1 cup of shredded cheddar cheese
- 1 cup of cream of mushroom soup
- 1/2 cup of sour cream
- 1/2 cup of diced onion
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cream of mushroom soup, sour cream, garlic powder, paprika, salt, and pepper. Mix well.
- Add the halved baby potatoes and sliced kielbasa to the bowl and stir until everything is evenly coated with the mixture.
- Transfer the potato and kielbasa mixture to the crockpot, spreading it out evenly.
- Cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
- In the last 30 minutes of cooking, sprinkle the shredded cheddar cheese over the top and cover to allow it to melt.
- Once done, stir gently and serve hot.
Notes
- For a spicier kick, consider adding some red pepper flakes.
- You can substitute the kielbasa with turkey sausage for a lighter version.
- Feel free to add vegetables like bell peppers or broccoli for extra nutrition.
