Instructions
- In a large mixing bowl, combine the diced cucumbers, red bell pepper, yellow bell pepper, and red onion.
- Add the chopped parsley to the bowl and mix gently to combine all the vegetables.
- In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper until well blended.
