- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/4 cup pickles, chopped
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 package eggroll wrappers (about 20)
- Oil for frying
- Salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add diced onions, salt, and pepper, and cook until onions are soft.
- Remove from heat and stir in shredded cheddar cheese, chopped pickles, ketchup, and mustard until well combined.
- Lay an eggroll wrapper on a clean surface with one corner pointing towards you.
- Place about 2 tablespoons of the beef mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold the sides in, and roll tightly to seal. Use a bit of water to help seal the edges.
- Repeat with remaining wrappers and filling.
- In a large pot or deep fryer, heat oil to 350°F (175°C).
- Carefully add eggrolls in batches and fry until golden brown, about 3-4 minutes, turning occasionally.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with extra ketchup or mustard for dipping.
Notes
- For a spicier version, add jalapeños to the beef mixture.
- These eggrolls can be baked instead of fried: brush with oil and bake at 400°F (200°C) for 20-25 minutes or until golden.
- Experiment with different cheeses or add cooked bacon for extra flavor.
