- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 pound ground beef
- 1/2 pound ground pork
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup green onions, chopped
- Salt to taste
Instructions
- Rinse the long-grain white rice under cold water until the water runs clear. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
- Add the minced garlic, ground beef, and ground pork to the skillet. Cook until the meats are browned and fully cooked, breaking them apart with a spoon.
- Stir in the Cajun seasoning, black pepper, and cayenne pepper (if using). Mix well to combine.
- Add the rinsed rice to the skillet, stirring to coat it with the meat mixture.
- Pour in the chicken broth, and bring the mixture to a boil.
- Once boiling, reduce heat to low, cover the skillet, and simmer for about 20 minutes, or until the rice is tender and has absorbed the broth.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, and mix in the chopped green onions. Season with salt to taste before serving.
Notes
- For a spicier version, add more cayenne pepper or diced jalapeños.
- This dish can be made ahead of time and reheated; flavors improve overnight.
- Serve with hot sauce for an extra kick!
