Ingredients

- 2 medium zucchinis, sliced into fries
- 1 cup breadcrumbs (panko preferred)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 large eggs, beaten
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- Dip each zucchini fry into the beaten eggs, allowing excess to drip off, then coat with the breadcrumb mixture.
- Arrange the coated zucchini fries in a single layer in the air fryer basket. Make sure they are not overlapping.
- Spray the zucchini fries lightly with cooking spray.
- Air fry for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving.

- For a spicier version, add cayenne pepper to the breadcrumb mixture.
- Can substitute breadcrumbs with almond flour for a low-carb option.
