Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the broccoli, cauliflower, and carrots.
- Add the minced garlic, olive oil, salt, pepper, thyme, and rosemary to the bowl.
- Toss the vegetables until they are evenly coated with the oil and seasonings.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
- Remove from the oven and serve hot.
