Instructions
- In a large mixing bowl, combine the peanut butter and honey (or maple syrup) until smooth.
- Add the vanilla extract and salt, mixing thoroughly.
- Gradually stir in the rolled oats and powdered sugar until well combined.
- Using a spoon or cookie scoop, form small balls of the mixture and place them on a parchment-lined baking sheet.
- Flatten each ball slightly with your fingers or the back of a fork.
- Refrigerate the cookies for at least 30 minutes to allow them to set.
- Once firm, enjoy your no-bake cookies! Store any leftovers in an airtight container in the fridge.

- For a chocolate twist, consider adding cocoa powder or dipping the cookies in melted chocolate.
