  • 4 cups fresh peaches, sliced
  • 2 cups fresh raspberries
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, vanilla extract, cornstarch, cinnamon, and lemon juice. Stir until well mixed.
  3. Transfer the fruit mixture to a greased 9×13 inch baking dish.
  4. In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
  5. Add the melted butter and milk to the dry ingredients, stirring until just combined.
  6. Pour the batter over the fruit mixture in the baking dish, spreading it evenly.
  7. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  8. Let cool for 10-15 minutes before serving.
  9. Serve warm, optionally with vanilla ice cream or whipped cream.
