- 4 cups fresh peaches, sliced
- 2 cups fresh raspberries
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, vanilla extract, cornstarch, cinnamon, and lemon juice. Stir until well mixed.
- Transfer the fruit mixture to a greased 9×13 inch baking dish.
- In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
- Add the melted butter and milk to the dry ingredients, stirring until just combined.
- Pour the batter over the fruit mixture in the baking dish, spreading it evenly.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
- Let cool for 10-15 minutes before serving.
- Serve warm, optionally with vanilla ice cream or whipped cream.
Notes
- For added flavor, try adding a pinch of nutmeg to the fruit mixture.
- This cobbler can be made with frozen fruit; just thaw and drain excess liquid before use.
- Serve with a scoop of ice cream for a delicious dessert!
