- 1 cup all-purpose flour
- 1 cup shredded mozzarella cheese
- 1/2 cup milk
- 1/4 cup olive oil
- 1 large egg
- 2 teaspoons baking powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 cup pizza sauce
- 1/2 cup diced pepperoni or your choice of toppings
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line with muffin liners.
- In a large bowl, whisk together the flour, baking powder, oregano, and salt.
- In a separate bowl, mix the milk, olive oil, and egg until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix.
- Fold in the shredded mozzarella cheese, pizza sauce, and diced pepperoni (or other toppings).
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack.
- Serve warm or at room temperature, and enjoy!
