Ingredients

  • 2 pounds of baby potatoes
  • 4 tablespoons of unsalted butter, melted
  • 4 cloves of garlic, minced
  • 1/2 cup of grated Parmesan cheese
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the baby potatoes, then place them in a large pot. Cover with water and bring to a boil.
  3. Add a teaspoon of salt to the boiling water and cook the potatoes for about 15-20 minutes until fork-tender.
  4. Drain the potatoes and let them cool slightly, then transfer to a baking sheet lined with parchment paper.
  5. Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.
  6. In a small bowl, mix the melted butter, minced garlic, salt, and pepper. Brush this mixture generously over the smashed potatoes.
  7. Sprinkle grated Parmesan cheese evenly over the potatoes.
  8. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
  9. Remove from the oven, garnish with fresh parsley, and serve hot.
