- 2 pounds of baby potatoes
- 4 tablespoons of unsalted butter, melted
- 4 cloves of garlic, minced
- 1/2 cup of grated Parmesan cheese
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the baby potatoes, then place them in a large pot. Cover with water and bring to a boil.
- Add a teaspoon of salt to the boiling water and cook the potatoes for about 15-20 minutes until fork-tender.
- Drain the potatoes and let them cool slightly, then transfer to a baking sheet lined with parchment paper.
- Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.
- In a small bowl, mix the melted butter, minced garlic, salt, and pepper. Brush this mixture generously over the smashed potatoes.
- Sprinkle grated Parmesan cheese evenly over the potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
- Remove from the oven, garnish with fresh parsley, and serve hot.
Notes
- For extra flavor, add herbs like rosemary or thyme to the garlic butter mixture.
- You can substitute the Parmesan cheese with nutritional yeast for a vegan version.
