- 4 medium zucchinis, sliced into 1/4-inch rounds
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the sliced zucchinis, olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss to coat evenly.
- Place the zucchini slices directly on the grill grates and cook for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
- During the last minute of grilling, sprinkle the grated Parmesan cheese on top of the zucchini slices and close the grill lid to melt the cheese.
- Once the cheese is melted and bubbly, remove the zucchini from the grill.
- Garnish with fresh basil leaves before serving.
Notes
- For a spicy kick, add red pepper flakes to the seasoning.
- Try substituting Parmesan with mozzarella for a different flavor profile.
- Grilled zucchini can also be served cold in salads or sandwiches.
