Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper, sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional 1 minute.
- Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon, about 7-10 minutes.
- Season with Italian seasoning, salt, and black pepper.
- Add diced zucchinis and tomatoes, stir to combine, and cook for another 5-7 minutes until zucchinis are tender.
- If desired, sprinkle with Parmesan cheese before serving.
Notes
- For a spicier kick, add red pepper flakes.
- This dish pairs well with rice or quinoa for a heartier meal.
