- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 red bell pepper, chopped
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup spinach (optional)
- Fresh parsley, chopped for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes.
- Add the diced sweet potatoes, paprika, cumin, salt, and pepper. Stir well to combine.
- Cover the skillet and let it cook for 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
- If using, add the spinach and stir until wilted, about 2 minutes.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- You can substitute ground turkey with ground chicken or beef if desired.
- Add other vegetables like zucchini or corn for extra flavor and nutrition.
- This dish can be made ahead and reheated for lunch the next day.
