Ingredients

  • 2 medium sweet potatoes, diced
  • 1 red bell pepper, chopped
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup spinach (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes.
  5. Add the diced sweet potatoes, paprika, cumin, salt, and pepper. Stir well to combine.
  6. Cover the skillet and let it cook for 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
  7. If using, add the spinach and stir until wilted, about 2 minutes.
  8. Remove from heat and garnish with fresh parsley before serving.

Notes
