- 4 medium potatoes, diced

- 1 cup chicken broth
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the diced bell pepper and cook for another 2-3 minutes.
- Stir in the ground turkey, breaking it apart with a spatula, and cook until browned.
- Season the mixture with thyme, paprika, salt, and pepper.
- Add the diced potatoes and chicken broth to the skillet, stirring to combine.
- Bring the mixture to a simmer, reduce heat to low, cover, and let it cook for about 25-30 minutes or until the potatoes are tender.
- Once cooked, remove from heat, and sprinkle with fresh parsley before serving.
Notes
- For a spicier kick, add some diced jalapeños or a pinch of cayenne pepper.
- This dish can also be made in a slow cooker; just combine all ingredients and cook on low for 6-8 hours.
- Feel free to substitute sweet potatoes for a healthier option.
