Deliciously healthy apple pie oatmeal cookies that are soft, chewy, and filled with warm spices and chunks of apple. Perfect for breakfast or a snack!

- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup diced apples (about 1 medium apple)
- 1/2 cup raisins or chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, and salt until well combined.
- In another bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples and raisins or nuts, if using.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra sweetness, add a tablespoon of brown sugar to the wet ingredients.
- Feel free to substitute the apple with other fruits like pears or berries.
- Store cookies in an airtight container for up to a week.
