- 2 cups rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), cocoa powder, and salt until well mixed.
- Add the dark chocolate chips and vanilla extract, and mix until the ingredients are evenly distributed. If using, fold in the chopped nuts.
- Press the mixture firmly into the prepared baking pan, ensuring it’s evenly spread out.
- Bake in the preheated oven for 20-25 minutes or until the edges are firm.
- Remove from the oven and allow to cool completely in the pan before lifting out using the parchment paper.
- Once cooled, cut into bars and enjoy!
Notes
- For a nut-free version, substitute almond butter with sun butter.
- Store the bars in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.
- You can customize these bars by adding dried fruits or seeds to the mixture.
