- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 4 cups fresh peaches, peeled and sliced
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the vanilla extract and mix well.
- In another bowl, whisk together the flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Press half of the dough into the bottom of the prepared baking dish to form the crust.
- In a separate bowl, combine the sliced peaches, lemon juice, cornstarch, and a sprinkle of sugar (if desired). Toss to coat the peaches evenly.
- Spread the peach mixture evenly over the crust.
- Crumble the remaining dough over the top of the peaches.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the peaches are bubbly.
- Allow to cool before slicing into bars and serving.
Notes
- For a variation, try adding blueberries or raspberries to the peach filling.
- Serve warm with a scoop of vanilla ice cream for an extra treat.
- Store leftover bars in an airtight container in the refrigerator for up to 5 days.
