Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 4 cups fresh peaches, peeled and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. In another bowl, whisk together the flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Press half of the dough into the bottom of the prepared baking dish to form the crust.
  7. In a separate bowl, combine the sliced peaches, lemon juice, cornstarch, and a sprinkle of sugar (if desired). Toss to coat the peaches evenly.
  8. Spread the peach mixture evenly over the crust.
  9. Crumble the remaining dough over the top of the peaches.
  10. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the peaches are bubbly.
  11. Allow to cool before slicing into bars and serving.
