  • ½ cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the ground cinnamon and 2 tablespoons of sugar for the filling.
  7. Spread a portion of the dough onto a clean surface and roll it out into a rectangle, about ¼ inch thick.
  8. Sprinkle the cinnamon-sugar mixture evenly over the dough, then roll the dough tightly to form a log.
  9. Slice the log into ½ inch thick rounds and place them on the prepared baking sheets, spacing them apart.
  10. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  11. While the cookies are baking, prepare the icing by whisking together the powdered sugar and milk until smooth.
  12. Once cookies are out of the oven, allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
