- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon ground cinnamon
- ½ cup powdered sugar (for icing)
- 1–2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- In a small bowl, combine the ground cinnamon and 2 tablespoons of sugar for the filling.
- Spread a portion of the dough onto a clean surface and roll it out into a rectangle, about ¼ inch thick.
- Sprinkle the cinnamon-sugar mixture evenly over the dough, then roll the dough tightly to form a log.
- Slice the log into ½ inch thick rounds and place them on the prepared baking sheets, spacing them apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- While the cookies are baking, prepare the icing by whisking together the powdered sugar and milk until smooth.
- Once cookies are out of the oven, allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Drizzle the icing over the cooled cookies and enjoy!
