Description

Delightfully colorful and flavorful, Italian Spumoni Cookies are a festive treat that combines the rich flavors of chocolate, pistachio, and cherry in a soft, chewy cookie.


Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup chopped pistachios
  • 1/2 cup dried cherries, chopped
  • 1/4 cup maraschino cherries, chopped
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chocolate chips, chopped pistachios, dried cherries, and maraschino cherries. If desired, add the almond extract for extra flavor.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden.
  9. Remove from the oven and let cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
