  • 1 cup powdered sugar
  • 1 (8 oz) tub whipped topping
  • 1 (3.4 oz) package instant lemon pudding mix
  • 2 cups milk
  • 1 (14.4 oz) package graham crackers
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water

Instructions

  1. In a large bowl, beat the softened cream cheese and powdered sugar together until smooth.
  2. Fold in the whipped topping and instant lemon pudding mix.
  3. Gradually add the milk while continuing to mix until well combined.
  4. In a rectangular dish, layer a single layer of graham crackers at the bottom.
  5. Spread half of the lemon filling over the graham crackers, smoothing it out evenly.
  6. Add another layer of graham crackers on top of the lemon filling.
  7. Spread the remaining lemon filling over the second layer of graham crackers.
  8. Add a final layer of graham crackers on top.
  9. In a small saucepan, combine lemon juice, granulated sugar, cornstarch, and water to make the glaze. Cook over medium heat, stirring constantly until thickened.
  10. Pour the lemon glaze over the top layer of graham crackers.
  11. Cover the dish and refrigerate for at least 4 hours, or overnight for best results.
  12. Slice into squares and serve chilled.
