- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) tub whipped topping
- 1 (3.4 oz) package instant lemon pudding mix
- 2 cups milk
- 1 (14.4 oz) package graham crackers
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 cup water
Instructions
- In a large bowl, beat the softened cream cheese and powdered sugar together until smooth.
- Fold in the whipped topping and instant lemon pudding mix.
- Gradually add the milk while continuing to mix until well combined.
- In a rectangular dish, layer a single layer of graham crackers at the bottom.
- Spread half of the lemon filling over the graham crackers, smoothing it out evenly.
- Add another layer of graham crackers on top of the lemon filling.
- Spread the remaining lemon filling over the second layer of graham crackers.
- Add a final layer of graham crackers on top.
- In a small saucepan, combine lemon juice, granulated sugar, cornstarch, and water to make the glaze. Cook over medium heat, stirring constantly until thickened.
- Pour the lemon glaze over the top layer of graham crackers.
- Cover the dish and refrigerate for at least 4 hours, or overnight for best results.
- Slice into squares and serve chilled.
Notes
- For a more intense lemon flavor, add additional lemon zest to the filling.
- This dessert can be made a day in advance for convenience.
- Feel free to substitute with different flavored pudding mixes for variety.
