- 2 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the russet potatoes into thin fries.
- Soak the cut fries in cold water for 30 minutes to remove excess starch.
- Drain and pat the fries dry with a clean towel.
- In a large bowl, toss the fries with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until crispy and golden brown.
- Remove fries from the oven and immediately sprinkle with shredded cheddar cheese and crumbled bacon.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with sliced green onions and drizzle with sour cream before serving.
Notes
- For a spicy kick, add jalapeños on top before serving.
- For a vegetarian version, omit bacon and use a plant-based cheese.
- Make sure to soak the fries; this helps them become crispier.
