  • 1/2 cup crushed pineapple, drained
  • 1/4 cup maraschino cherries, halved

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, mix crushed graham crackers, melted butter, and brown sugar until well combined.
  3. Press the mixture evenly into the bottoms of a muffin tin lined with cupcake liners.
  4. Bake the crusts for 5-7 minutes until set, then remove from the oven and allow to cool.
  5. In a mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  6. Add the egg and mix until just combined, being careful not to overbeat.
