Instructions
- In a large mixing bowl, combine the rolled oats, peanut butter, honey, chocolate chips, ground flaxseed, vanilla extract, and salt.
- Mix well until all ingredients are thoroughly combined.
- Refrigerate the mixture for about 30 minutes to make it easier to handle.
- Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls.
- Place the energy bites on a baking sheet lined with parchment paper.
- Store the energy bites in an airtight container in the refrigerator for up to a week.
Notes
- Feel free to substitute almond butter for peanut butter for a nut-free version.
- Add dried fruits or nuts for extra flavor and texture.
- For a sweeter bite, increase the amount of honey to taste.
