- 1 pound kielbasa, sliced
- 1.5 pounds baby potatoes, halved
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced kielbasa and cook until browned, about 5-7 minutes.
- Remove the kielbasa from the skillet and set aside.
- In the same skillet, add the baby potatoes and cook for 10 minutes, stirring occasionally.
- Add the chopped onion, diced bell peppers, and minced garlic. Cook for another 5 minutes until vegetables are tender.
- Stir in the smoked paprika, oregano, salt, and pepper.
- Add the browned kielbasa back to the skillet and mix well. Cook for an additional 5 minutes until everything is heated through.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, try adding a splash of hot sauce or your favorite seasoning blend.
- This dish can be made with other types of sausages as well.
- Feel free to add other vegetables like zucchini or corn for variation.
