Ingredients

  • 6 to 8 tablespoons ice water
  • 4 cups fresh peaches, peeled and sliced
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, mix together flour, salt, and sugar.
  2. Add the diced butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the ice water, one tablespoon at a time, until the mixture forms a ball.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat your oven to 375°F (190°C).
  6. In another bowl, combine sliced peaches, sugar, cornstarch, vanilla extract, and cinnamon. Mix well to combine.
  7. On a floured surface, roll out the dough to about 1/8 inch thick.
  8. Cut the dough into 5-inch circles using a cutter.
  9. Place a spoonful of the peach mixture in the center of each circle.
  10. Fold the dough over to form a half-moon shape and press the edges to seal.
  11. Brush the tops with the beaten egg for a golden finish.
