- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 cup unsalted butter, chilled and diced
- 6 to 8 tablespoons ice water
- 4 cups fresh peaches, peeled and sliced
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, mix together flour, salt, and sugar.
- Add the diced butter and mix until the mixture resembles coarse crumbs.
- Stir in the ice water, one tablespoon at a time, until the mixture forms a ball.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 375°F (190°C).
- In another bowl, combine sliced peaches, sugar, cornstarch, vanilla extract, and cinnamon. Mix well to combine.
- On a floured surface, roll out the dough to about 1/8 inch thick.
- Cut the dough into 5-inch circles using a cutter.
- Place a spoonful of the peach mixture in the center of each circle.
- Fold the dough over to form a half-moon shape and press the edges to seal.
- Brush the tops with the beaten egg for a golden finish.
- Place the hand pies on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- For a richer flavor, consider adding a pinch of nutmeg to the peach filling.
- These can be made with other fruits such as apples or berries.
