Description
Delicious homemade peach hand pies, filled with juicy peaches and a hint of cinnamon, encased in a flaky crust. Perfect for dessert or a sweet snack!
Ingredients
Scale
- 2 cups fresh peaches, peeled and diced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 package (14 oz) refrigerated pie crusts
- 1 egg, beaten (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine the diced peaches, sugar, lemon juice, cinnamon, and cornstarch. Mix well and set aside to let the juices meld.
- Roll out the pie crusts on a lightly floured surface and cut them into circles (about 4-5 inches in diameter).
- Place a tablespoon of the peach filling in the center of each circle.
- Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
- In a small bowl, mix the beaten egg and milk. Brush the mixture over the top of each hand pie for a golden finish.
- Place the hand pies on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
- For a richer flavor, add a pinch of nutmeg to the filling.
- These hand pies can be frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
- Serve warm with a scoop of vanilla ice cream for an extra treat!
