Ingredients

  • 2 cups fresh peaches, peeled and diced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 package (14 oz) refrigerated pie crusts
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the diced peaches, sugar, lemon juice, cinnamon, and cornstarch. Mix well and set aside to let the juices meld.
  3. Roll out the pie crusts on a lightly floured surface and cut them into circles (about 4-5 inches in diameter).
  4. Place a tablespoon of the peach filling in the center of each circle.
  5. Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
  6. In a small bowl, mix the beaten egg and milk. Brush the mixture over the top of each hand pie for a golden finish.
  7. Place the hand pies on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown.
  9. Remove from the oven and let cool slightly before serving.

Notes

  • For a richer flavor, add a pinch of nutmeg to the filling.
  • These hand pies can be frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
