- 1 pound ground turkey
- 1 cup orzo pasta
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté for about 3 minutes until softened.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced bell pepper, diced tomatoes, chicken broth, orzo, and Italian seasoning.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Season with salt and pepper to taste, and remove from heat.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add red pepper flakes while cooking.
- You can substitute ground turkey with ground chicken or beef if desired.
- This dish can be made ahead of time and reheated for quick meals.
