Description

Ingredients

  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté for about 3 minutes until softened.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the diced bell pepper, diced tomatoes, chicken broth, orzo, and Italian seasoning.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  6. Season with salt and pepper to taste, and remove from heat.
  7. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add red pepper flakes while cooking.
  • You can substitute ground turkey with ground chicken or beef if desired.
