- 1 cup jasmine rice
- 2 cups water
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 avocado, sliced
- 1 cup cucumber, thinly sliced
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- 1/4 cup mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon lime juice
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for about 15 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, heat olive oil in a large skillet over medium-high heat. Add the shrimp, garlic powder, paprika, salt, and pepper. Cook for 3-4 minutes until the shrimp are pink and opaque.
- In a small bowl, mix together the mayonnaise, sriracha, and lime juice to make the spicy mayo.
- Once the rice is ready, fluff it with a fork and divide it into bowls.
- Top the rice with the cooked shrimp, sliced avocado, cucumber, and chopped green onions.
- Drizzle the spicy mayo over the top and sprinkle with sesame seeds.
- Serve immediately and enjoy your delicious shrimp rice bowl!
Notes
- Feel free to add other vegetables like bell peppers or carrots for extra crunch.
- You can substitute shrimp with tofu for a vegetarian option.
- Adjust the spiciness of the mayo by adding more or less sriracha according to your taste.
