  • 1 pound shrimp, peeled and deveined

  • 1 avocado, sliced
  • 1 cup cucumber, thinly sliced
  • 2 green onions, chopped

  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon lime juice

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for about 15 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, heat olive oil in a large skillet over medium-high heat. Add the shrimp, garlic powder, paprika, salt, and pepper. Cook for 3-4 minutes until the shrimp are pink and opaque.
  4. In a small bowl, mix together the mayonnaise, sriracha, and lime juice to make the spicy mayo.
  5. Once the rice is ready, fluff it with a fork and divide it into bowls.
  6. Top the rice with the cooked shrimp, sliced avocado, cucumber, and chopped green onions.
  7. Drizzle the spicy mayo over the top and sprinkle with sesame seeds.
