- 1 ½ cups graham cracker crumbs

- 1 cup powdered sugar

- 1 cup sour cream
- 1 tablespoon lemon juice
- 2 cups fresh strawberries, hulled and sliced
- ½ cup strawberry jam
- 1 cup crushed freeze-dried strawberries
- ¼ cup granulated sugar (for topping)
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to create the crust.
- In a large bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
- Add eggs one at a time, mixing just until incorporated. Do not overmix.
- Stir in sour cream and lemon juice until smooth and creamy.
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight.
- Once chilled, top the cheesecake with sliced strawberries and drizzle with strawberry jam.
- In a small bowl, mix crushed freeze-dried strawberries with granulated sugar and sprinkle over the cheesecake for added crunch.
- Slice and serve, enjoying each creamy, crunchy bite!

- For a more intense strawberry flavor, use homemade strawberry sauce instead of jam.
- You can substitute the sour cream with Greek yogurt for a lighter version.
