Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to create the crust.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  4. Add eggs one at a time, mixing just until incorporated. Do not overmix.
  5. Stir in sour cream and lemon juice until smooth and creamy.
  6. Pour the cheesecake filling over the prepared crust in the springform pan.
  7. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
