Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the sliced mushrooms with olive oil, balsamic vinegar, honey, garlic powder, thyme, salt, and pepper.
- Toss until the mushrooms are evenly coated with the mixture.
- Spread the mushrooms in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the mushrooms are golden brown and tender.
- Remove from the oven and let cool slightly before serving.
- Garnish with chopped fresh parsley before serving.
