- 6 cups fresh peaches, peeled and sliced
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon butter, cut into small pieces
- 1 package pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the sliced peaches, sugar, flour, cinnamon, and lemon juice. Gently toss to coat the peaches evenly.
- Roll out one pie crust and place it in a 9-inch pie dish, leaving any overhang.
- Pour the peach mixture into the pie crust, spreading it evenly.
- Dot the filling with small pieces of butter.
- Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal.
- Cut slits in the top crust to allow steam to escape. Brush the top with beaten egg for a golden finish.
- Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- Remove from the oven and let cool for at least 2 hours before serving.
Notes
- For a sweeter pie, increase the sugar to 1 1/4 cups.
- Add a pinch of nutmeg for extra flavor.
- Serve with a scoop of vanilla ice cream for a delightful treat.
