Creamy Base

  • 1 cup freshly grated parmesan cheese
  • 2 tbsp butter
  • 2 green onions, sliced for garnish

Instructions

  1. Cook Pasta: Bring large pot of salted water to boil. Cook spaghetti according to package directions until just shy of al dente. Reserve 1 cup pasta water before draining.
  2. Season Chicken: Cut chicken into bite-sized pieces and season generously with cajun seasoning, paprika, garlic powder, cayenne, and black pepper. Let sit 5 minutes to absorb flavors.
  3. Sear Chicken: Heat olive oil in large skillet over medium-high heat. Add seasoned chicken and cook 6-8 minutes until golden brown and cooked through. Remove and set aside.
  4. Sauté Vegetables: In same skillet, add butter, diced onion, and bell pepper. Cook 4-5 minutes until softened. Add minced garlic and cook 30 seconds until fragrant.
  5. Build Sauce: Pour in chicken broth and heavy cream, whisking to combine. Bring to gentle simmer and let reduce slightly for 3-4 minutes until it starts to thicken.
  6. Combine Everything: Add cooked pasta, seared chicken, and parmesan cheese to sauce. Toss everything together, adding pasta water as needed to achieve creamy consistency.
